Those Cookies I Like
Saturday, July 17th, 2010Preheat oven to 350*
- 1/4 lb of butter (1/2 cup or 1 stick)
- 1/2 cup of brown sugar
- 1/2 cup of white sugar
- 1 egg
- 1/2 Tbsp vanilla
- 1 cup of flour
- 1 cup of chopped oats
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup shredded coconut (sweetened)
- 1 cup 12 oz pack chocolate chips (semi-sweet or milk)
- 1/2 cup of chopped walnuts
Melt butter and mix into sugars. Add egg and vanilla until creamy. Add four, oats, baking soda & salt to an even consistency. Add coconut, chocolate chips and walnuts until mixture resembles bowlful of wet granola bar. Place on ungreased cookie sheet about 2 inches apart and bake at 350* for about 10 to 12 minutes (depending on oven). After cooling, cookies should have crisp edges and a soft center.
